I've got a GeForce 8800GT and AMD Athlon 64 X2 and the game is slow (I would say that it's going ~30fps or less) at fullscreen 1280x1024. I tried windowed 1024x768 and it's way better. What gives? 3D games work fine, for instance Borderlands, Civilization V, Mount&Blade... I'm really confused by this...
Is it really lag or it's just you not being used to the game pace/ animation speed? I have played Dredmor in both an old laptop and an almost new computer and worked fine on both, only issue a bit of lag when changing music, but that's all. Does it happen all the time? or just specific moments like, when there's lots of blood?
Well it's slightly slow all the time, but get's real nasty when there's lots of blood and the such (also when entering/exiting a shop, but I heard that's common). I've seen the game on my friends' computer and there runs better :/
Hmm... shop lag is common, the lot's of blood one is getting fixed in next patch, but the general lag sounds weird... Have you tried defragging the game/verifying cache/reinstalling? If none of these work, I don't know what it can be besides some compatibility issues with your computer :/

Go to the game on steam, Right-click it, go to properties, and both of those options should appear there (fiddle around with the tabs, can't remember wich ones had the options)
